When we talk about curing meat in Franche-Comté, we cannot ignore the immense farms with a 'tuyé' in the Haut-Doubs. The stone house is arranged around a space of 20 m2 with a huge pyramid-shaped wooden chimney above it: the tuyé. When all other exits were blocked by the snow, the mountain people went out through the tuyé. But the actual application of this chimney, which is characteristic of the Doubs, is the smoking of meat. This conservation practice is characteristic of Franche-Comté. Smoked pork products are eaten in the area from the mountain slopes of the Jura to the Vosges. Dried sausage, sausage, pate, poitrine…. The pig is prepared in thousands of ways to delight the taste buds of meat and meat lovers.
